Even though my pumpkin was a big guy instead of the small kind he reccommended, it still turned out delicious. The pumpkin seeds didn't work out for me. I toasted mine but they just were big and chewy, not crunchy at all. Maybe too old? I added walnuts instead on next batch - superb! Watch the video if you get a chance and follow his directions on creating something like an emulsion with the eggs, sugar, and veg oil and vanilla extract. It was a new procedure to me, but I think it made a big difference in the bread. Like he says, most recipes put the sugar with the dry ingredients!
